Prep food waste is a big contributor to our food waste challenge.
All kitchens should have bins in place to put all trimmings in, which can be used in stocks or for garnishes, which ensures full product utilisation. Trimmings are a great addition to stock, but also can be fried as vegetable crisps for garnishes on bowl food, canapés or even as a side.
